These muffins might look more naughty than nice but they’re a quick, easy and delicious treat.

Ingredients:

  • 1 & 1/4 cups spelt flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 cup stevia
  • 1/4 cup organic pure maple syrup
  • 1/2 cup plain greek yogurt
  • 2 tablespoons melted butter, slightly cooled
  • 1 teaspoon organic vanilla extract
  • 1 beaten egg white
  • 1/2 cup of 80% dark chocolate, cacoa nibs or carob chopped up

Method:

  1. Preheat fan forced oven to 175c degrees
  2. Line muffin tin with patties
  3. In a large bowl, toss the baking soda, spelt flour and cinnamon together
  4. In the bowl of a stand mixer (here we used a Kitchenaid), using the whisk attachment beat egg white
  5. Again using the whisk attachment, add into the bowl of the mixer, and whisk together the beaten egg white, maple syrup, stevia, yogurt, butter, and vanilla together until there’s no lumps and everything’s combined
  6. Pour the wet ingredients into the dry ingredients and stir to combine
  7. Fold in the dark chocolate/cacao nibs/carob
  8. Fill muffin patties then bake for around 16 minutes or until a toothpick comes out clean
