These muffins might look more naughty than nice but they’re a quick, easy and delicious treat.


  • 1 & 1/4 cups spelt flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 cup stevia
  • 1/4 cup organic pure maple syrup
  • 1/2 cup plain greek yogurt
  • 2 tablespoons melted butter, slightly cooled
  • 1 teaspoon organic vanilla extract
  • 1 beaten egg white
  • 1/2 cup of 80% dark chocolate, cacoa nibs or carob chopped up


  1. Preheat fan forced oven to 175c degrees
  2. Line muffin tin with patties
  3. In a large bowl, toss the baking soda, spelt flour and cinnamon together
  4. In the bowl of a stand mixer (here we used a Kitchenaid), using the whisk attachment beat egg white
  5. Again using the whisk attachment, add into the bowl of the mixer, and whisk together the beaten egg white, maple syrup,┬ástevia, yogurt, butter, and vanilla together until there’s no lumps and everything’s combined
  6. Pour the wet ingredients into the dry ingredients and stir to combine
  7. Fold in the dark chocolate/cacao nibs/carob
  8. Fill muffin patties then bake for around 16 minutes or until a toothpick comes out clean
