ANYTHING GOES OMELETTE

Omelettes are a quick and easy for anytime of day and this anything goes omelette is the ultimate lazy but healthy meal. The best thing is you can pretty much throw in anything you’ve got in your fridge to create a nutritious and delicious meal. All you need is 2 eggs!

Ingredients

  • 2 eggs
  • ½ leek
  • A hand full mushroom
  • Feta

Method

  • Chop leek and mushrooms.
  • Put oil into a fry pan on medium heat.
  • Place leek and mushrooms into pan and sauté.
  • Place 2 eggs into a bowl and beat lightly.
  • Remove mushroom and leek from the pan.
  • Add a touch more oil to pan and pour eggs into the pan and spread to cover to bottom of the pan.
  • Add feta, leek and mushrooms
  • Flip half the egg pancake over to cover feta, leek and mushrooms.

Tip: Best to slightly undercook as eggs will continue to cook after they’re taken off.
