This stuffed capsicum is a delicious and simple nutrient filled meal. Whether cooking for one or a few this is an easy and healthy weeknight option.


  • 500g pork mince
  • 2 large capsicum
  • 4 carrots
  • ½ an onion
  • 1 zucchini
  • Basil
  • Garlic
  • Oregano


  • Heat your oven to 200 degrees fan-forced
  • Add 1 teaspoon of oil in sauce pan and heat
  • Put onion and mince into pan and cook until brown
  • Lightly salt and add spices to taste
  • Cut top of capsicums and clear out the core
  • Once mince is cooked, remove from heat and fill the capsicum
  • Once filled, place on the over tray and drizzle with olive oil and put the lids back on
  • Bake in the pre-heated oven for 25 minutes
